1/2 bunch (100g) field-mustard (nanohana)

2 slices cooked loin ham (thin-sliced)
1 tsp whole-grain mustard
2 tbsp mayonnaise
1/2 tbsp say sauce
salt

  1. Cut thin-sliced cooked ham into 1cm square pieces.
  2. Break the tough ends (5mm) of field mustard and discarded. Fill a bowl with cold water and put field-mustard with the cut side down. Let stand for about 15 minutes until field-mustard are revitalized. Drain on a bamboo draining basket (a sieve).
  3. Prepare a bowl with filling with cold water. Blanch the stems (the cut side) first in boiling salted water for a few seconds and then place all of the field-mustard. Drain and chill in cold water until completely cooled. Squeeze it well.
  4. Place the field-mustard flatly on a trai. Sprinkle soy sauce on it. Squeeze it again and cut into half.
  5. Mix the whole-grain mustard and mayonnaise in a bowl. Toss the field-mustard and ham.
